"The smoke rises and the firewood crackles. The smell of spice fills the back kitchen in rural Rajasthan... as she carefully pours out whole, fresh milk.
A tea tableau of afternoon chai, with uncertain glances at the stranger with the camera.
The milk is key − usually from cows, occasionally from camels. Mixed with strong black tea, it gives the warm drink a kick... and the drinker a boost. Sugar (lots of sugar), cardamom and a pinch of saffron round out the local recipe.
Chai is India’s national drink, cementing friendships and agreements. Some say it keeps the country running – even in the poorest villages."
